The paper disccussed the best technical conditions of liquor-making with uncooked materials.By the orthogonal experiment the technics conditions were established when the Liquor yield ratio was the highest compared with the yield ratio of raw materials.That is,pH value is 5,ferment time 10 days,koji and materials ratio with 1.0%,ferment temperature 32℃,water and materials ratio 300%. |
